Step 1: Cook The Soup
To cook the soup, start by placing stockpot on a high heat. Add butter in a stockpot and let it melt in 5 minutes. Then add onions and caramelize it for 20 minutes. When onions are nicely caramelized, add sherry wine, thyme and chicken stock. Season with salt and pepper and stir the soup. Let it cook for about 20 minutes.
Step 2: Prepare Croutons
To prepare the croutons, cut baguette bread into slices and place them on a baking sheet. Next, brush olive oil on each bread piece and then season with salt and pepper, turn them, and season as before. Place baking sheet in the oven and bake for 5 minutes until breads are brown in color. Remove baking sheet from the oven and turn them to the other side and bake for another 5 minutes.
Step 3: Assemble The Soup
To assemble the soup, carefully spoon the soup into oven-resistant soup bowl. Now place few croutons on a soup and cover them with heaping amounts of grated cheese. Place soup in the oven and bake for 5 minutes, just until the cheese is melted.
Step 4: Garnish and Serve
Remove baking sheet from the oven. Garnish the soup with few sprigs of thyme. Your French Onion Soup is ready to enjoy!
