Step 1: Prepare Caramel Sauce
Heat the saucepan over medium heat then add sugar and water. Do not mix it immediately and wait until the sugar begins to caramelize. After caramelization, begin stirring the mixture slowly. Once it completely caramelizes, pours water very carefully. Mix together well and then add the vanilla bean and lemongrass. Lower the heat and continue stirring constantly. After about a minute, stir in the lime juice and bring it to a boil. Remove sauce from the heat and let it sit for 10 minutes so that the flavors infuse, then strain it through a sieve and set aside.
Step 2: Chop the Fruits
Peel and cut peach, pineapples, orange, bananas, melon, strawberries. Chop the mint leaves and place them into the bowl.
Step 3: Make Fruit Salad
In a large bowl add peaches, pineapples, orange, bananas, melon, strawberries, mint.
Pour cooled caramel sauce over fruit. Toss the fruits gently and make sure everything is well coated.
Step 4: Garnish the Fruit Salad
Sprinkle the berries on the top. Place vanilla ice cream on top of fruits. Pour honey over the ice cream and place cherries on top and serve immediately.
