Step 1: Prepare Cookies Dough
User an electric blender to blend butter and brown sugar in a bowl until it is pale and creamy. Add golden syrup and egg yolk and beat until combined. Stir in the flour, ground ginger, mixed spice and bicarbonate soda. Turn onto a lightly floured surface and knead until smooth. press dough into a disc. Cover with plastic wrap and place in the fridge for 30 minutes.
Step 2: Bake The Cookies
Roll dough out until about 4mm thick. Use a 9cm gingerbread man cookie cutter to cut out shapes. Place in prepared baking sheet about 3 cm appear. Repeat same process with remaining dough, bake in oven for 10 minutes at 180 degrees until brown. Remove from oven. Transfer to wire race to cool.
Step 3: Prepare Icing
Meanwhile, place egg white in a clean, dry bowl. Use an electric blender to beat until soft peaks form. Gradually add icing sugar and beat until stiff peaks form. Divide icing among 3 bowls equally. Add red coloring to 1 bowl and stir until combined. Add green coloring to remaining bowl and stir until combined.
Step 4: Decorate and Serve Gingerbread Christmas Cookies
Pour prepared icings one by one in small frosting bags. Decorate the gingerbread with all three flavored icings along with gems. Your Gingerbread Christmas Cookies are ready to serve!!
