Step 2: Make Dough

To make dough, in a large saucepan add water and salt and bring water to a boil over high heat. Then add russets potatoes and boil for about 1 to 1-1/2 hours or until the potatoes are tender. Remove potatoes from the saucepan and cool for 10 minutes. Then peel and mash the potatoes. Then add flour, egg yolks, melted butter, salt, white pepper, nutmeg powder in a mashed potato bowl and mix together and form into a ball.

Step 3: Shape The Dough

Cut dough ball into four equal pieces. Roll out each piece between both hands on work surface into a 2cm rope shape 1/2 inch thick in size. Cut each dough rope into bite sized pieces. Roll each piece with a fork to shape into gnocchi and place them on the plate.

Step 4: Boil The Gnocchi

To boil the gnocchi, fill a large pot with a water and add a pinch of salt and bring to a boil. Drop gnocchi into boiling water until they float, 4 to 5 minutes. Once cooked, drain Gnocchi carefully with a slotted spoon and transfer to a serving plate. Pour pomodoro sauce over gnocchi and sprinkle grated parmesan cheese and chopped basil on the top. Serve immediately!
