Step 1: Prepare & Cook Meatballs
To prepare meatballs, mix mild Italian sausage, lightly beaten egg, bread crumbs, fennel seeds, fresh Italian parsley and cayenne pepper in a bowl and make dough. Roll the dough to make small balls. Then heat takoyaki pan in medium flame and cook meatballs for 10 minutes and keep aside.
Step 2: Prepare Vegetable Mixture
To prepare vegetable mixture, for that heat large pot on stove. Add olive oil, onion, dried thyme and sage into it and sauté it well. Then add garlic, carrot pieces, celery and mix it well. Simmer for 5 minutes.
Step 3: Prepare Italian Wedding Soup
Now prepare Italian Wedding Soup, then add chicken stock, bay leaf, cooked orzo pasta, spinach in vegetable mixture and mix it well. Finally add meatballs into the mixture and cook for 2-3 minutes. Stir the meatballs gently. Your delicious Italian Wedding Soup is ready. Garnish it with shredded parmesan cheese and serve it hot.
