Step 1: Chop Fruits

Cut 2 strawberries, 1 banana, 2 apricots and 1 kiwi into small slices.

Step 2: Prepare Pancake Batter

Add flour, brown sugar, baking powder, flax powder and a pinch of cinnamon powder and mix it well using a silicone spoon. Later take one more bowl to mix 3 eggs along with vanilla extract, butter and milk. Mix the batter using a spatula. Mix both flour and egg mixture together in one bowl thoroughly to make pancake batter.

Step 3: Cook the Pancake

Heat the pancake maker at high temperature. Set the temperature low and pour the batter in the empty pancake space. Let the batter bake for five minutes before flipping them. Wait for two more minutes and then take out the pancakes.

Step 4: Assemble and Serve

Finally your yummy mini pancakes are ready. You could assemble the pancakes using the different sliced fruits. Thread pancakes on wooden skewer with desired fruits in various combinations. Try serving it with Mascarpone cheese too. So, what are you waiting for? Put your apron on!
