Step 1: Prepare Flour Mixture
Preheat oven to 350 degrees. Line muffin tin with paper cases. Combine flour, baking powder, baking soda, cinnamon, nutmeg, ground cloves, ground ginger and salt in a medium bowl, mix it and set aside.
Step 2: Prepare Pumpkin Muffin Batter
In a large bowl, mix together pumpkin puree, sugar, brown sugar, and canola oil. Mix on medium-high speed about one minute until well combined. Add eggs, one at a time, beating after each addition. Add flour mixture and mix at low speed until just combined. Then fold raisins in the batter.
Step 3: Bake and Serve Pumpkin Muffin
Fill the muffin cups with the batter using spoon or a scooper. Place pumpkin muffins in the oven and bake for about 25 minutes or until golden brown. Remove pumpkin muffins from the oven and place on a wire rack to cool completely. Top with sunflower seeds and chopped walnuts. Serve!
