Step 1: Chop the Veggies
For making pumpkin soup, begin by chopping onion, garlic clove, sage leaf, and fresh thyme leaves.
Step 2: Prepare Pumpkin Soup
In a stockpot heat the olive oil over medium-high flame. Add the chopped yellow onion and saute until translucent. Then add chopped garlic, thyme, and sage into the stockpot and stir it well. After this add the chicken broth, pumpkin, salt, and black pepper it well. Bring to a boil and lower heat to a simmer. Cover with a lid and cook for 1-hour stirring occasionally. Puree the soup using a hand blender. Remove the Stockpot from the heat
Step 3: Garnish and Serve Pumpkin Soup
Stir in the heavy cream. Serve in a bowl and garnish with heavy cream and parsley.
