Step 1: Make Cheesecake Crust
To make crust, preheat oven to 180F. Generously coat the bottom and sides of a 9-inch springform pan with butter. Place graham crackers in a zip lock plastic bag and crush them with a rolling pin. Transfer graham cracker crumbs in a large bowl. Then add melted butter, sugar and mix until thoroughly combined. Pour graham crackers mixture into the prepared pan and press evenly into the bottom and slightly up the sides. Place pan in the oven and bake for 10 minutes until just golden. Remove pan from the oven and set aside while preparing cheesecake filling.
Step 2: Make Cheesecake Filling
To make cheesecake filling, in a large bowl add beaten cream cheese, flour, golden caster sugar and beat until well blended. Add vanilla extract, lemon zest, lemon juice, sour cream, 3 eggs, 1 egg yolk and beat until incorporated. Transfer cheesecake filling into the prepared crust and spread it evenly.
Step 3: Bake Cheesecake
To bake cheesecake, preheat oven to 350 F. Place cheesecake pan on a larger baking sheet and place it in the oven and bake for 30 minutes. Lower the oven temperature to 250F and continue to bake for 60 minutes until just the edges of the cake are browned and the center is barely set. Remove cheesecake pan from oven and cool it completely before decorating.
Step 4: Decorate Cheesecake
Pour strawberry sauce over the cheesecake and decorate with halved strawberries. Your strawberry cheesecake is ready to be served!
